I AM a messy baker; I can’t help it. Seriously, I’ve tried being neat and it usually ends in disaster. It starts off OK: I’ll bring out the ingredients one at a time for measuring, then put them back in the cupboard or drawer from which they came. I’ll be thinking about how well this is going and praising the heck out of myself for being so organised and clean. Halfway through this neat baking process, something will always go wrong. I swear it’s a legitimate curse. Thus, I give up the organised method and haul all the ingredients out again for round two. Once made, into the oven it goes with the timer set. By this stage I’ll probably have lost the will to clean up the general mayhem that once was a kitchen, and so will leave the area entirely. This leads to another whole palaver involving listening out for the faint beeping of the oven timer, which I’ll probably not hear until the second time it goes off and will subsequently have to power slide into the kitchen to save the batch of cookies from a smoky death. What is the point of me telling you this? Well, if someone like me, who prefers to bake in messy chaos, is capable of making these recipes, everyone is. I prefer simple baking methods that require minimal kitchen utensils (did I mention that I also hate washing dishes?) so if lack of fancy equipment is your main concern, don’t worry. If you have a saucepan, bowl, spoon and whisk, chances are you too can make these recipes for your elevenses, 4 p.m. energy boost or low-key dessert.
